Food Safety Policy
You will be required to demonstrate that you have a 'Food Safety Policy'.
This policy must be signed by the person in your business who is responsible for food safety.
The policy should cover:

Training your employees on food safety and hygiene requirements
Risk Assessment
You will also need a written 'Food Safety Risk Assessment' that:

Identifies all related food safety risks

Describes how you will manage the identified risk

Records hazards that could pose a food safety risk

Consider cross contamination risk from bins, equipment, transport, fruit in contact with the ground or other sources and allergen risks.
